Salmon Provencal is a delightful dish that combines the rich flavors of salmon with the vibrant essence of Provencal cuisine. Cherry tomatoes, Kalamata olives, capers, and fresh basil create a Mediterranean-inspired topping that perfectly complements the tender salmon fillets. This dish is simple to prepare and bursting with savory goodness.
Ingredients:
- 4 salmon fillets 6 oz each
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and halved
- 2 tablespoons capers
- 1/4 cup fresh basil leaves, chopped
- Salt and black pepper to taste
Instructions:
Preheat oven to 400F 200C
Season salmon fillets with salt and black pepper on both sides
In a large ovenproof skillet, heat olive oil over medium heat
Add minced garlic and cook until fragrant, about 1 minute
Add cherry tomatoes, Kalamata olives, and capers
Cook for another 2 minutes
Place seasoned salmon fillets in the skillet, skin side down
Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork
Remove from the oven and sprinkle chopped basil over the salmon
Serve hot, garnished with additional basil leaves if desired
